Beaulieu-sur-Layon, Loire Valley.

La Coulee d’Ambrosia is run by the ever passionate Jean Francois Chene. He took over 1.5 hect- ares of Cabernet Franc, 3 hectares of Chenin Blanc and a small amount of Grolleau from his fa- ther in 2005. The vineyards are located in the Beaulieu sur Layon region just south of the Loire River. He runs all of the vineyards using biodynamic principles and care is taken to respect the natural cycle vine, the vineyard and the region.

In the Cellar the wines are made with a light hand to a full-fruited style, sometimes with skin contact and sometimes with oxidation. No additions are made to the wines at any point and they are bottled without SO2. The theme through these wines is the incredible minerality and purity.

Eureka Method Ancestrale Sparkling - Chenin Blanc planted on schist and grown with bio- dynamic principles. Pressed at a density of 1001, lightly sparkling, some balanced sweetness.

Panier de Fruits 2010 - Chenin Blanc planted on schist and grown with biodynamic principles. Manually pressed into tank no SO2.

L’O2 Fruits 2010 – Chenin Blanc planted on schist, grown to biodynamic principles. Manually pressed into barrel.

L’O2 Vigne 2009 – Chenin Blanc planted on schist, grown to biodynamic principles. Manually hand pressed into barrel. Aged in Barrel for 36 months Sous Voile.

Le Boit Sans Soif 2013 – 35 year old Grolleau vines planted on schist grown to biodynamic principles. 10 days carbonique. Light, hard to not drink in 20 mins.

Le Joues Rouges 2013 – 65 year old Cabernet Franc vines planted on schist, grown to biody- namic principles. 15 days carbonique manually pressed to tank, bottled spring of the following year.
